This is great using lemon or limes. I LOVE using tiny key limes even though it takes me a long time to get all the juice I need! This is a very tart and lemony pie. It was my Dad’s favorite and I remember lots of good times with him when I make it. He also loved banana cream.
Ingredients and Instructions
the day before I make the pie crust and chill it in the fridge
I also wash my lemons so they are ready to go
Graham Cracker Crust
set oven for 350F
in a saucepan melt 1/3 cup butter
add – 1/4 cup sugar
1 and 1/2 cups graham cracker crumbs
mix well and press lightly into deep pie pan (I use a Pyrex 9 inch pan)
Bake for 1o to 12 minutes – watch edges do not burn
cool on wire rack and then place in fridge
Before starting – grate your lemon peel. Make sure you only take off the yellow part – the white underneath is very bitter!!
in a large saucepan
mix together – 1 cup sugar
6 tablespoons cornstarch
1/4 cup water
3/4 cup lemon juice
3 egg yolks
stir while adding
1 and 1/2 cups boiling water
bring mixture to a full boil (lots of bubbles) while stirring over medium heat
be careful the bottom is not starting to brown
take off heat and add
3 tablespoons butter
1/2 teaspoon grated lemon peel
I cool this quickly by placing saucepan in the sink with some cold water around it
once cooled add
1 cup whipping cream – whipped
8 ounces thick Devon cream
whipping cream ready to be whipped
DO NOT overwhip your cream – you will get butter!! Just until the cream will hold a shape – see the lines created from my electric mixer. I can whip cream by hand with a whisk. Once, I even did it with a fork because that is all my friend had!! Took a while but tasted just as good!
add whipped cream to lemon filling and mix together with electric mixer
place mixture in your pie shell and cool at least 3 hours before serving
You can see I did not quite get everything mixed together – but still tasted awesome!!
sadly (or happily) this pie only lasts about 2 days so enjoy with friends!!
By the time I have this posted – our friends have helped us eat ALL the pie!!
